Soups

April 15, 2012 § Leave a comment

I love soups. They can be really nutritious, fast to put together and freeze well. Here are some of my “Old Reliables” that I can mostly make at a pinch with things I have to hand. Feel free to tweak or to add to these recipie, I go mostly by eye and by taste, so this is really a rough outline of how to do them.

Tanja’s Vegetarian Leek and Tomato Soup with Cream Cheese

For some simple ingredients, this is a really nice twist on tomato soup, which I can’t stand.

Ingredients

  • 1 “box” of Passata or two tins of tomatoes (any kind) plus more tomatoes if you like
  • 2 cups of vegetable stock
  • 1 small onion, diced
  • 2 cloves of garlic
  • 2 leeks, sliced
  • 1 knob of butter
  • 250g cream cheese (1 package)
  • 1T tomato purĂ©e
  • 2t dried basil and some pepper (to taste)

Method
1. Fry the leeks, onions and garlic in the butter
2. Put the passatta, tomatoes and stock in together in a pot
3. Then simmer for 30mins
4. Put all of the mixture into a blender except for 1 cup
5. Then mix them all back together again
