Soups

I love soups. They can be really nutritious, fast to put together and freeze well. Here are some of my “Old Reliables” that I can mostly make at a pinch with things I have to hand. Feel free to tweak or to add to these recipie, I go mostly by eye and by taste, so this is really a rough outline of how to do them.
Tanja’s Vegetarian Leek and Tomato Soup with Cream Cheese
For some simple ingredients, this is a really nice twist on tomato soup, which I can’t stand.
Ingredients
- 1 “box” of Passata or two tins of tomatoes (any kind) plus more tomatoes if you like
- 2 cups of vegetable stock
- 1 small onion, diced
- 2 cloves of garlic
- 2 leeks, sliced
- 1 knob of butter
- 250g cream cheese (1 package)
- 1T tomato purée
- 2t dried basil and some pepper (to taste)
Method
1. Fry the leeks, onions and garlic in the butter
2. Put the passatta, tomatoes and stock in together in a pot
3. Then simmer for 30mins
4. Put all of the mixture into a blender except for 1 cup
5. Then mix them all back together again

Turkish Lentil Soup
A great way to use up some extra potatoes.
Ingredients
- 1cup red lentils
- 4 cups vegetable stock
- a quarter of a mild onion
- half a cup of white potatoes
- 1t paprika
- 1t salt
- pepper (to taste)
Method
1. Rinse lentils
2. Put all ingredients in the potand bring to the boil
3. Then simmer for 30mins
4. Put all of the mixture into a blender except for 1 cup
5. Then mix them all back together again
