Firstly thank you to Miss Thrifty UK for featuring my rhubarb jam on her blog and also to two new followers: Texanaskitchen and Karen Berthine :)
In the summer I eat a lot of salad, partly because if everything is washed then it’s a very lazy but healthy snack or side dish – or main if you add other things to it.
My sister asked me to post this simple dressing which is enough for a salad for two or three people who dont like so much dressing.
Simple Vinaigrette Salad Dressing
- 1 slightly heaped teaspoon of grainy mustard (Ive got the Kühne brand). You could also use non-grainy but keep in mind how hot it is.
- 2 tablespoons of olive oil (i am all out of the fancy salad kind and instead am using cooking olive oil. See? Not picky.)
- 1 tablespoon of either lemon juice or apple cider vinegar
- 1 tablespoon of water
- half a teaspoon of honey, or at a pinch, sugar
- Salt and pepper
Play around with it to get it as tangy or sweet as you like it because unless you have the exact same oil and vinegar as me, it’s going to be different. As you would expect, the better quality ingredients you use, the better it will taste, particularly for the olive oil. I prefer to err on the edge of tangy than sweet.
I mix it quickly at the bottom of the salad bowl and then throw the rest of the salad on top and toss. I don’t even bother making a large batch. Do you add anything different to your dressing? If you make it please let me know how you like it or if you’d tweak it any :)
