Jammin’

I hope you like jammin’ too :) Here’s some simple apricot jam I made (2 parts fruit, 1 part sugar). I used a kilo of fresh, pitted apricots and added a little lime that was going hard in the fruit bowl for a little more tartness and heated them for 15mins. It made three small jars. I would love to make more jam with the summer fruits while they’re in season. It’s really my favourite time of the year and I really enjoy a little flavour of those sunshiney days when they feel so far away :) I can also add some jam to some curry and creme fraiche to make a fruity curry dip… or put a blob into porridge… or make some apricot and poppyseed slices :)
